After trying at least 20 different beans, I pick Yirgacheffe as my favorite coffee bean. I roast it myself and found this bean is the most forgiving bean. I try before second crack and after second crack using different timing. Although roasting profile indeed have variation on cupping. However, I like the taste of all of them. Other bean such as Sumatra have acidity that I don't like if under roast a bit. A suggestion to the packaging based on my recent experience of purchasing them from FRC. I bought two ten pound bags and got the shipment very fast. However, as I tried to cut open the packaging, the 5 pound bag got cut open due to the fact that there's no protection underneath. I suggest that a layer of card board underneath the sealing tape to protect the bean packaging.

Rich and sweet with very abundant syrupy crema. Never sour or bitter. Rewards careful preparation but doesn't punish mistakes. Highly recommended.
